I attempted to cook paneer pudina cutlets and mushroom galouti (mushroom cutlets). The paneer pudina cutlets are probably the easiest dish to create - rightly so, cause I managed to cook them! :D For anyone who would want to whip up a quick and tasty snack, I recommend you try out these cutlets. All you need to do is combine grated paneer, pudina (chopped), green chilies, cornflour and salt. Once they are combined, make small balls and flatten it out and they are ready to pan fry. You can sprinkle a bit of chaat masala just to have your palate wanting some more. <br><br>Mushrooms are probably the second most used &#x201C;protein&#x201D; in our house after cottage cheese. I was extremely eager to try out this recipe - it was going to be a completely different way we would use mushrooms. In a pan, drizzle some oil and sautee garlic, green chillies and mushrooms. <br><br><em>Cooking Tip: Pan fry mushrooms with a bit of oil and it will give out its water and eventually evaporate. This helps the mushrooms retain their flavour and also add on the natural flavour of it to the dish. </em><br><br>To the mushrooms, add on your desired masalas. Since this is a mushroom galouti, we added indian spices such as chilli powder, turmeric, garam masala and cumin powder with a pinch of salt. Once the mushrooms are cooked, blend it to a paste. To the paste, add one boiled and mashed potato (as mentioned earlier, no dish is complete without potato!), gram flour, paneer and coriander and combine them well. Make patties and pan fry them and ta-da, delicious mushroom galouti is ready. This whole experience for me was very exciting and refreshing because it was one of the few times that we would use mushrooms in a different form rather than just using it for pasta or biryani which are equally delicious although! <br><br>Chapter 12: Can&#x2019;t go wrong with Maggi! <br><br>It goes without saying that every household in India would have a packet of Maggi and also all the Indians studying abroad too would have not just one but many packets of maggi stored! I decided to experiment with maggi - I know its a crime but believe me it&#x2019;s not all that bad! Please don&#x2019;t judge! I decided to bring together the 3 most indulgent ingredients together - maggi, cheese and potatoes in order to make maggi cheese balls. <br><br>This recipe does involve a few processes but trust me, it&#x2019;s worth it! First off, you need to cook the maggi and strain it, to which you must add mashed potatoes, corn flour, the one and only maggi taste maker, chilli powder, turmeric powder, garam masala, cumin powder (hope I haven&#x2019;t forgotten any masalas), green chillies and salt. Combine them well and flatten it out and add a cheese cube. Cheese tip: it needs to be a processed cheese. Wrap the cheese inside and then coat the balls, first with maida slurry and then with maggi crumbs (uncooked). Do not worry, this may seem like it will be waste but it isn&#x2019;t. Again, please do not judge me! Deep fry them until it turns golden brown. <br><br>Okay, so now, you may have used one packet of maggi to make the crumbs which were used to coat the balls. By doing so, you are getting an extra packet of maggi masala to be used later and this is just heaven; I mean it&#x2019;s a God sent gift! The value of this extra packet of maggi masala is priceless. I told you there would be an upside in all of this! &#xA0;<br><br>Chapter 13: Capocuoca (<em>chef in Italian</em>) <br><br>The reason behind the title of this chapter is because I went all chefy one day and decided to make an authentic Italian dish: Gnocchi. And yet again, potatoes are proving themselves that they are indeed the base of every dish! Woohoo! <br><br>Ok I&#x2019;m back from potato world; the first step is to make the dough for which you need to combine the mashed potatoes with flour. The flour needs to be added in small quantities and the dough must be soft. This was, for me, a pretty difficult process cause the dough becomes too sticky and difficult to work with. And that is why the amount of flour to potato ratio must be accurate. <br><br>Once the dough is formed, you then can shape it into gnocchi like shapes and use a fork to make an imprint too at the end. Lay out the gnocchi on a tray (dusted with flour to prevent a sticky situation) and you can refrigerate it too for later if you would like. Add the gnocchi to a pot of boiling water and the gnocchi will come afloat once it is cooked through. <br><br>The sauce to go with it can be as simple as a butter sauce or pesto or a tomato sauce too. I served the gnocchi with a butter sauce. You could also make a pesto sauce and it is by far the simplest sauce to make: all you need to do is blend basil leaves, walnuts, garlic, olive oil and salt and you&#x2019;ve got yourselves a tasty bowl of pesto. This too can be kept frozen for later use. Achievement unlocked: gnocchi! <br><br>Chapter 14: Sugar Therapy <br><br>I did have a go at many desserts as a matter of fact; I shall share some of those experiences here for you all. <br><br>One of the first desserts I attempted to cook was churros! And the main reason I wanted to make these were because I was craving for it and that was it - I looked up videos and found a simple eggless recipe to make churros. Honestly, I don&#x2019;t know what I would have done without youtube! Saviour! To make the churros, you need to add water to a pan, to which you must add butter, sugar, salt (a pinch only), vanilla essence and flour. You must turn off the heat and combine them. You then need to transfer this mixture into a piping bag and pipe them into hot oil. <br><br>Interestingly, I did not have a piping bag, so I made one. I took a zip lock bag, cut off the zip part of it and turned it into a cone and cut the bottom of the cone in order to pipe out the mixture. I must admit, it was a messy job. Nevertheless, I piped the mixture into the oil and for some reason, they were getting stuck to each other. And up until now, I do not know the reason why! Huh! <br><br>Once they are cooked, you take them out of the oil and drain them on a tissue paper; roll them in a mixture of sugar and cinnamon powder and you have the best tasting churros ever! For me at least :P <br><br>I took it up a notch and had a go at apple crumble. It may sound like a technical dish but really it isn&#x2019;t. It is one of the easiest desserts to make: you need to peel and chop apples and coat them with brown sugar and cinnamon powder and lay this onto a baking dish. To make the crumble, you need to combine flour, butter and sugar. To make the crumb is actually a very interesting process. You need to combine them with your fingertips in order to get the crumb texture and it was so exciting to see that texture develop in front of my eyes. For me, it was as though I had climbed Mt. Everest! You then spread across the crumbs onto the apples and bake it! As simple as that - So simple that I could end this recipe in just one paragraph! Hahaha! <br><br>Cookie cravings never seem to end in our family! The first time I baked cookies and it was all impromptu. One day, my superhero says that she has found a nice recipe to bake honey walnut cookies and I&#x2019;m like &#x201C;Let&#x2019;s do this!&#x201D; To start off, you need to bring together butter, sugar, honey and oil until the mixture is light and fluffy. Honestly, when I watch cooking shows and they say this, I was confused and didn&#x2019;t quite understand it. But once you give it a go, you get the point of light and fluffy. In another bowl, you must combine, flour, whole wheat flour, baking powder and salt. Till date, I am unsure why salt is added to many desserts cause it is just a pinch of salt that is added - musings! You then mix the dry and wet ingredients together and to that you must add walnuts and cinnamon. Be careful with the amount of cinnamon that you add cause it has a very overpowering taste and the end result might be cinnamon cookies rather than honey (I&#x2019;m saying this from experience). Knead this to a dough and take small amounts of the mixture and make small balls, flatten them out and lay on a baking tray - ready to bake! Cool them off and serve it with a warm chamomile tea! I was just trying to sound all cookbook-y! <br><br>Conclusion: <br><br>Although we have come to the end of this short story, it does not end my cooking tales. My love for cooking has grown and been nurtured in this time frame and I am thankful for it. <br><br>I would definitely have to thank my family for being the guinea pigs to all my recipes and encouraging me to cook more. I am extremely fond of Chinese Cuisine; yes even though I&#x2019;m a pure vegetarian, I do enjoy Chinese cuisine and yes you do get vegetarian food in this cuisine. Fun fact: you get more vegetarian food in China than you can imagine! I came across a recipe for making bok choy broth with noodles! YUM! I knew exactly where I could find bok choy and headed on to the store and picked it up for the first ever time in my life. I was ecstatic and was awaiting to use this wonderful green vegetable. I must admit, I was a bit confused the first time I saw the vegetable in its purest form. I questioned myself whether this was the right vegetable and asked about 3-4 people just to confirm my doubts. The OCD in me will never end! I got home the bok choy and realised I have no idea how to prepare it - what a wow moment! Nonetheless, youtube to the rescue and I managed to swiftly look through some videos. Believe it or not, but making soup ain&#x2019;t as hard as expected. What needs to be bang on are the flavours and once that is on point, everything else falls into place. You get the water boiling, add on the standard Chinese spices: ginger, star anise, soy, garlic, vinegar and chilli sauce. To this boiling, flavoursome pot of goodness, add on your most preferred vegetables; I add bok choy, mushrooms and carrot. <br><br><em>Cooking tip: Cook the noodles in the broth, in order for the noodles to soak in that awesome flavour and then be gobsmacked by it! </em><br><br>And that&#x2019;s it! There is your classic noodle soup! Meant to be &#x201C;eaten&#x201D; - anytime! :D <br><br>Chapter 6: Cottage Cheese All Day<br><br>In our household, paneer is a staple; it is as important as rice! Yes, we love paneer :P</p><p>The first recipe I tried out with paneer was Garlic Paneer: create a marinate consisting of cornflour, pepper, chilli powder, garlic paste, red chilli sauce and oregano. All you need to do is marinate the paneer in this mixture and pan fry it. Um um ummmm :) <br><br>I wanted to take cottage cheese to the next level, so I attempted at making Paneer Manchurian - a classic Indian - Chinese dish. For some reason, I thought I would just pan fry some paneer with a bit of oil. <br><br><em>Cooking tip: Never do the above! You will be left with paneer that is hard and dry - not a great texture I must say. </em><br><br>The base of the dish, however, is the sauce and this is pretty simple: oil (obviously!), garlic, spring onions, tomato sauce, chilli sauce, soy and vinegar. It goes without saying that salt is needed according to taste.</p><p>Taste: check! Texture: Ugh! <br><br>The third time was the charm: Chilli Paneer! A favourite among us Indians and for good reason. &#xA0;The secret to this recipe is to take the main two components of the previous recipes and merge them together - match made in heaven! So you marinate the paneer with pretty much the same ingredients as mentioned above with the addition of maida and you fry the paneer. Warning: the oil splutters so beware! Make the sauce and combine the two together and you have got yourselves a good ol&#x2019; bowl of chilli paneer - comfort for any situation. <br><br>Chapter 7: Grocery Shopping! <br><br>I am not a shopaholic; I used to love shopping only for two things: books and stationery; &#x2018;now added to the list&#x2019; (get it?), grocery shopping! I totally and utterly love grocery shopping - it instigates the peace within me - zen mode on. <br><br>It gives you a chance to see what are some of the new things you may want to try; it inspires me to come up with some wacky ideas. It teaches us about fresh produce and how we must always use fresh ingredients no matter what - ground rule of cooking. <br><br>I walk through all the aisles, knowing I would not have anything to buy but will look through them just to broaden my knowledge of food. Maybe this is why no one likes to go grocery shopping with me cause I take my own sweet time. Now maybe they know why I dislike going shopping with them for clothes and what not! &#xA0;<br><br>And it was in one of these trips to the shop that I came across Fennel. I had heard about it, seen it on television and always wondered what would this taste like? What could I possibly make out of it? More to come about fennel in the next chapter. Keep Cooking!<br><br>Chapter 8: Discovery of Fennel<br><br>Fennel is now one of my favourite vegetables. The minute I saw it, it was love at first sight. I was captivated by it; by the bulb at the bottom, to the stalk and finally the fronds - so beautiful in its own essence and existence. I had no idea how to use it or what I would make out of it but the way I felt clearly gave me the signal to pick it up. <br>I&#x2019;m back home and narrating this beautiful love story of fennel to my mom as though I just wanted to admire it and not even use it. Don&#x2019;t worry I did use it. I started to look up how it is to be treated and prepped. There were many who said that the fronds can be used but there were some others who said it was best not to use it. I decided not to use the fronds as this was the first time I was cooking with it and I wanted it to be as perfect as possible. <br><br>Heated a pan with some olive oil, sauteed some garlic with butter and added the fennel to soak in as much flavour as possible. I then garnished it with some chopped parsley and viola! The best salad ever with as few ingredients as possible. <br><br><em>Cooking tip: For this particular recipe, it is best to serve the fennel hot! </em><br><br>I would definitely want to experiment more with this beautiful vegetable and make as many dishes as I possibly can!<br><br>Chapter 9: Om Nom Nom <br><br>Disclaimer: Potato is a God sent gift and we must respect it to the highest level possible! I love potatoes! And it is such a versatile vegetable and can be consumed in ways which would ignite the utmost level of happiness within us. Here, I am going to share my love for potatoes with you all. <br><br>People always criticise potatoes for being too fatty and what not! Although, my opinion is that potatoes are the base of innumerable dishes and without them, the world would not be complete. Be it mashed, boiled, sauteed, fondants, grated, pan fried or deep fried, they are enjoyable in every which way. Personally, I love mashed potatoes the best! But I am going to pen down my experience of grated potatoes here. <br><br>One of the ways I used grated potatoes was I made them into potato pancakes :) It is the most simple recipe: all you need to do is combine the grated potatoes with corn flour, gram flour, pepper, jeera (cumin seeds) and chilli and pan fry this mixture and ta-da! You&#x2019;ve got yourselves some really delicious potato pancakes. <br><br>Another variation of the grated potatoes could be, potato waffles. For my version of potato waffles, I combined grated potatoes with cream cheese, spring onions, chilli flakes, oregano and salt with some flour for binding. Take a scoop of the mixture and spread it across the waffle pan and you&#x2019;re done! It can be eaten as a snack or for breakfast itself cause that&#x2019;s the charm of potatoes! <br><br>Chapter 10: Misses :( <br><br>Quinoa, the most decorated healthy grain. I too wanted to know what the fizz about quinoa was. I had absolutely no prior knowledge about quinoa, no idea how to cook it, what to make with it etc. One day, I decided to make quinoa pulao and started to look up ways to make the same. The first step is to soak the quinoa for a good 60 minutes. A heads up for all of you: this is first time I&#x2019;m attempting to make pulao; yes any kind of pulao. I was excited to use all the masalas (whole spices): bay leaf, green cardamom, cloves, star anise as well as all the goodness of spices like turmeric, chilli powder, cumin powder and coriander powder. Just a whiff of all these aromas and your mouth starts salivating for some sumptuous deliciousness. You then need to add the drained quinoa and cook on low heat. <br><br>Final product was delicious; you could taste the quinoa, the spices all individualistic in their flavours but an amalgamation of them a flavour bomb in your mouth. The recipe that I tested out was for a trial to see how my family would enjoy this dish. Some of us consumed it immediately after it was prepared. The remainder was kept aside for the evening and by then, the taste had gone bitter and all that deliciousness had evaporated. <br><br><em>Cooking tip: Always (and I mean always) consume quinoa immediately after it has been cooked. Buon Appetito! Meshiagare! These are some of the different languages you can use to say &#x2018;Enjoy your meal!&#x2019; And they are all such beautiful ways of saying this phrase. All the sounds that are enunciated are as important as the ingredients used in any recipe. <br><br>The joy of cooking is nothing but the joy of giving and there is no greater joy than that. As the year 2020 moved on, there was a time when everything came to a standstill and this was the moment that I put on my &#x2018;chef&#x2019; hat and dwelled into my passion for cooking. The only thing on my mind would be &quot;What do I cook next? What are the ingredients I need to buy? Can I experiment with something new?&quot; etc. And this would lead to hours of Youtubing recipes and believe me if you could see the tabs open on my laptop right now, you would know the kind of foodie I am :P <br><br>So where did I develop this love for cooking? Well, it has to be from my mother - she is an exceptional cook and the love she puts into her food is boundless and I hope that someday I can recreate those dishes for her too. The spirit of cooking was rekindled and kept alive through cook shows such as Masterchef Australia, Top Chef and many others. I would not miss an episode and would watch it on repeat too, if need be. Nonetheless, the majority of what was shown was non-veg and me, being a pure vegetarian would still watch these shows and understand the techniques and words that were being used - not that I ever tried them but still - growing knowledge. My passion for cooking was &#x2018;flambe&#x2019;d&#x2019; through various movies - No Reservations, Chef etc. I also loved to see the scene from Harry Potter (the first one) where the feast is shown and I would be flabbergasted by the whole essence of food. <br><br>And so, the lockdown was a way to bring me back to one of my biggest passions - cooking. Just the other day, I was watching the movie &#x2018;Julie &amp; Julia&#x2019; and it completely moved me in ways I could never imagine. This was an inspiring moment for me when I thought to myself - maybe I could combine my two biggest passions together: cooking and writing. And so here I am, writing about the things I love the most. <br><br>Chapter 1: Microwave Meals<br><br>Act II Popcorn, a revelation for our generation - the joy of the crunch, the pop, the whiff of butter and taste of salt - a combination one can never refuse. Similarly, I came across a lot of microwave dishes myself - pasta, cakes and pizza too. And so the first dish I &#x201C;cooked&#x201D; was in the microwave (didn&#x2019;t involve much cooking, obviously) and I made pasta: macaroni, mozzarella cheese, milk, oregano, chilli flakes and salt and voila pasta is ready - deliziosa! Although, I did have a disaster of a cook trying to make mug pizza in the microwave and once it was cooked (not!), all I could eat was the toppings which were tomato sauce, olives and cheese. Oops! <br><br>My microwave meals did not stop there; I also made my mother&#x2019;s birthday cake too and this was an Oreo chocolate cake and surprisingly, it was great! To go with the cake, I made a chocolate sauce which I tried to drizzle as delicately as possible across the cake only to make it look like an explosion of chocolate sauce. Oh heck, as long as it tasted good! Dainty presentation and minimalism was something that I had to imbibe and it wasn&apos;t going to be easy. <br><br>Chapter 2: Improvise! <br><br>One day, I ventured out into making bread rolls which are basically, bread rolled out and stuffed with cottage cheese. Disaster number 1: Could not roll out the bread after cutting the edges. Disaster number 2: applied some water on the bread in order to roll it out and guess what, the bread not only broke but was stuck to the rolling pin!<br><br><em>Cooking tip: If the bread is stored in the refrigerator, do get it to room temperature before using it! Duh! </em><br><br>So what did I do? Improvise! I made my stuffing which tasted delicious; it was a combination of cottage cheese and all the possible Indian masalas such as garam masala, chilli powder, amchur powder etc. With the stuffing, instead of making them into rolls, I just made them into toasts and guess what: it was just fine :) <br><br>Case 2: <br><br>I decided to make tacos! No, unfortunately not from scratch - I did have store bought tacos and I just needed to make the filling. This was no traditional taco - it did not have any native ingredients that goes into a taco. It was an Italian take on a taco - I added mushrooms, capsicum, spices, Italian seasoning, chipotle sauce and mayonnaise. But the taco didn&#x2019;t seem to be consumable and what did I do? You guessed it right - I &#x2018;improvised&#x2019; to the most basic toast with mushroom and capsicum toppings. And my family enjoyed it! Simple joys of cooking :) <br><br>To conclude, I &#x201C;improvised&#x201D; the dishes to toast! Amateur cook problems, I tell you&#x2026;. <br>Chapter 3: Oven Phobia<br><br>I decided to have a go at another cake but this time I wanted to be all chefy and I decided to bake the cake in the oven. Gutsy, I must say! Well, lets see the downfall of my guts&#x2026; I decided to make a butterscotch cake which had 3 parts to it: the sponge, praline and the cream. My first encounter with the oven and I forgot to remove the things that were kept inside the oven which included a plastic covering of some trays. Wow! Thankfully my mother walked into the kitchen around the same time and questioned me whether I had removed everything from the oven. My worst nightmare ever - and the best/worst part was that there was no cooking involved but I managed to create a crisis and almost banned myself from the kitchen. I mustered up some courage and continued to bake the cake (without my mom&#x2019;s assistance and just so you&#x2019;re wondering, no I did not burn anything else :P). However, the catastrophe does not end here; the cake was looking good baking away in the oven and it was time to make the praline. I caramelised the sugar until I thought I had taken it long enough and poured it over the baking paper. <br><br><em>Cooking tip: Either do not pour hot sugar on the baking paper directly or grease the baking paper with oil or butter </em><br><br>With this cooking tip, you would have guessed the outcome of the praline: once it cooled and I needed to take it off from the paper, it refused to come out by itself but brought along the paper too! And my superhero walks in again at the same time and somehow manages to save half of the praline. I guess my mom just knew when I might create another disaster in the kitchen, huh. <br><br>After almost 4 hours, I finally managed to put up a cake that looked like one and I guess you could say it was worth the effort. Period. <br><br>Burnt&#x2026;. <br><br>One day, I was extremely ambitious and decided to make mushroom dust. The process of doing so, is by drying out the mushrooms and there are multiple ways of doing this. Obviously, I wanted the quick and easy way out of this and I added my lack of knowledge to this. One of the ways of drying out mushrooms in the oven is to slow dry them for about 6-8 hours at a temperature of about 60*C. Another way of doing the same was to dry them out at a high temperature for a period of only 20 minutes at 160*C. Not having researched my way into this process, I thinly sliced the mushrooms and laid them out onto the tray. Confusion and doubts overwhelmed me and I decided to drizzle the entire tray with some olive oil. What did not come to mind was that, with the oil, the mushrooms are going to cook - so obvious. Nonetheless, I turned my head for 10 minutes and the whole kitchen, yes you guessed it, was filled with smoke - the mushrooms were burnt. I was devastated. Ummmmm, well that went down the drain (literally!) But I would not let this disappointment stop me from having another go at the oven and I did and I overcame it! My victorious story will be revealed soon - stay tuned :) <br><br>Chapter 4: From scratch<br><br>I have always noticed on culinary shows, the judges ask whether certain things have been made from scratch or if it is store bought? And the credibility that goes into making a dish from scratch is one like none other. I too wanted to give myself this badge of credibility and decided to make ravioli from scratch. There are three components which bring the dish together which are the dough, filling and the sauce. This was my first attempt at making any kind of dough - I haven&#x2019;t even made chapati dough before - what a disgrace! I was extremely excited to kick start this recipe.<br><br>First things first, I started with the dough and rested it. Good amount of exercise for the hands I thought. Although, before kneading it by hand, we must mix the maida, salt, olive oil and water with a fork until it becomes a shaggy dough. Then we&#x2019;re to knead it by hand. Step one complete: dough is ready and is resting in the fridge. <br><br>Step 2: The next step is to make the filling. I attempted to make a mushroom filling and here I tried to bring in as much creativity as I could - I didn&#x2019;t even follow a recipe! I sauteed mushrooms with garlic and basil and once it cooled off, and in order to give it some more structure, I added some cream cheese - inventive enough? <br><br>Step 3: Now, I had to roll out the dough and this is the most difficult part of it all - believe me! Initially, I cut the raviolis into squares but they would break eventually. And so my superhero mom had the idea of using a cup to cut out the raviolis which not only made life easier but they were uniform too. Carefully added the cut raviolis to a pot of boiling water until they were cooked. <br><br>Step 4: As the raviolis were cooking, side by side, I started working on my sauce which was just a plain basic burnt butter sauce with basil. Every time, I dissolved the butter it seemed to magically disappear and so I continuously added butter to the pan. <br><br><em>Cooking Tip: Melt a lot of butter initially and once the butter is melted turn off the stove! </em><br><br>The raviolis were cooked, the sauce was ready and now I just had to bring them together. I gently tossed the raviolis in the butter sauce and they were ready to serve and boy oh boy were they squisito! Muah! Success! <br><br>This brings us to the end of part one.
